Hi! It's been a while, I know, I'm sorry. I'd thought that I would have been able to blog more given that the holiday season had just ended, but life (and exams) got in the way. Thankfully, exams ended today - though it's only the beginning of a new sem, and we've got exams in about three months' time again... I'll think about it when the time comes.
Went for lunch at Coco Ichibanya with some of the Beerfest people after the exam, and I managed to satisfy my craving for Japanese curry hehe. Wanted to eat rollie olie at first (their new poke bowl looks delicious!) but unfortunately there weren't enough seats for us. Coco Ichibanya's not bad, they have really nice free-flow pickles which I ate with my salmon teriyaki curry - though I think I still prefer the curry from monster curry!
Anyway, aside from studying, the December break wasn't all too bad. I signed up for kfit, and I've been trying out different yoga/pilates studios, and taking the opportunity to try out a few new sports. It's really worth it, even without the discount after the first month (in my opinion), and it's a great investment! So far, I've also tried out muay thai, pole dancing and some interval classes (among others). I have this thing where I'm going to exercise a lot without running a single day, because running is awfully inefficient and I hate running. But we'll see how that works out. I'm also trying to eat healthier, though it's not a "resolution" of mine. I didn't actually make any resolutions this year, because resolutions seem to indicate towards an "end goal", whereas what I'm trying to do is hopefully create habits that I'll keep for life. So, as part of my attempt to do this healthy living thing, I've been trying to eat more at home... Or bring food to school (usually a spinach salad). The other day, I felt like making something other than a salad for lunch and since I had some extra couscous and quinoa at home, I decided to make fried "rice"! It's really easy to make, and it's so good :-) Took me less than ten minutes to prepare + cook (but that's also because I pre-cooked a large batch of quinoa on the previous Sunday for the week). I'm trying to do this meal prep thing too, and I'd like to say it's been going well but it's too soon to say. Well, it (supposedly) takes three weeks to create a habit, so check back soon!
Quinoa and Couscous Fried "Rice"
☀︎ 30g couscous
☀︎ 20g quinoa (cooked)
☀︎ 50g button mushrooms, sliced
☀︎ 100g tofu, cubed
☀︎ 30g sweet corn
☀︎ cherry tomatoes, sliced into halves
☀︎ 3 egg whites
(note: the measurements are what I used, feel free to adjust them to your liking and substitute ingredients wherever you'd like to!!)
Put your pan on medium heat, and spread olive oil all over it. I used about two drops. Add your button mushrooms and stir them around for about two minutes, before adding your tofu, and some salt and pepper. Continue stir-frying for a minute more, before adding your couscous, quinoa and corn. Stir-fry for about one more minute, and then transfer it onto a plate.
In the same pan, add the three egg whites and scramble them (I find that the flavours of the previous ingredients are left behind in the pan and it just makes the egg whites taste very nice hehe), and then place them atop your "rice!" Lastly, add some cherry tomatoes on top and sprinkle pepper and sesame seeds over the whole thing, because sesame seeds kinda make everything better.
